ohh...I've been wanting to bake for ages but since I can't eat what I want to make and there's no one else to eat it, my oven has remained off.

Sure!!!!!!!! I love to bake, just hate to clean up my mess!
Luckily, baked goods do not stick around here long! Sometimes, I bake all day, then freeze what I make. Cookie dough (most of them) can be prepared, double wrapped, then put into a freezer. That way, if you just want to make a dozen of cookies at a time, you can pull out the dough and wham, into a hot oven, and you have fresh cookies! I do that with chocolate chip, oatmeal, lemon/orange, and sugar cookies. I know they keep in the freezer for about two/three months. Shoot, not that they last that long around here, but, it is especially fun in the cold winter months to put a batch of cookies in the oven, and have hot chocolate/tea/booze! LOL For Christmas, I start early in November, bake up some cookies and put them right into tins, double wrapped, and, into the big freezer. Saves me a load of time and keeps them hidden from view from the "Cookie Monsters" here at home!

I have a wonderful recipe for "Southern Lemon Nut Bread" which is more cake like than bread! Makes a lovely loaf for dessert, as a hostess gift, or pot luck gatherings. Simple to make, and, light and refreshing. Guess from start to finish it takes about an hour and a half, it freezes well, and, travels well.
