Gosh, I am sorry...didn't think on my part!! If you go to the supermarket, right around sausage and bacon, you will find it packaged about the size of a brick, so a pound. The most common brand I know of is "Rappa Scrapple." In a nutshell, it is liver, pork, cornmeal mush, spices, a few other things that is put into a "mold" to firm it, then you can slice it oh about a quarter inch or less to hold its shape and fry it. Most southern folks will dredge it in flour to 'crisp it on up', then drain on paper towels. Usually eaten with breakfast food selections!
Now while some people can't tell the difference between scrapple and sausage, I can by taste and the smell of the liver content. Toss in some fried eggs, homefries with onions, grits, coffee and voila...gets the tummy up and going for the day! Give it a try, isn't costly to buy. :wave:
